Which commercial beers use herbs?

Somersault Ale

Made by New Belgium Brewing Company in Fort Collins, CO

Uses Centennial hops (gives a citrus aroma) and Ginger root.

Belgian White Wheat Ale

by Shock Top Brewing Co in St. Louis, Missouri

Wheat ale brewed with citrus peels and coriander "and other spices".

Trippel by New Belgium Brewing: includes the herb coriander

History of herbal beers

Before 1516's Bavarian Purity Law it was not uncommon for beer or ale to be made with all different psychotropic herbs.

  • Sage Ale-brewed in middle ages as medicinal tonic.

  • Yarrow ale-brewed for weddings for its aphrodisiac qualities.

  • Leann Fraoich (heather) ale

  • Meadowsweet ale

  • Juniper Ale

  • Elder flower ale

  • Sweet Woodruff ale

Other common ingredients in European ales included: Clary sage, gentian, ginger, comfrey, horehound, and rosemary.

Herbs are used by brewers as bitter herbs, flavorings and or aromatics.

Bitter Herbs include: horehound, sage, dandelion, milk thistle, nettle, yarrow, clary sage, ginger root, licorice root.

Flavoring herbs include: juniper, rosemary, hyssop, borage, ginger, oregano, mint, bee balm, lemon balm, sweet woodruff (vanilla flavor), marjoram, licorice, thyme, cardamom (for spicy cola flavor), coriander, elderberries, star anise.

Aromatic herbs include: rosemary, hyssop, lavender, chamomile, lemon balm, bee balm, all spice berries, sarsaparilla (improves mouth feel), rose hips.

Where to buy hop seeds and How to grow hops plants to harvest for brewing.

There are several different types of hops that can be grown from seeds and from root cuttings. It all depends on your environmental conditions and space. High alpha indicates more bittering compounds.

*Brewers Gold Hop Seeds: Heirloom seeds from 1919 from a wild hop in Morden, Manitoba. Commercially grown in Spain and Belgium. Heavy producer. Alpha 8-10%.

*Cascade Hop Seeds: American type lagers. Alpha 5-6%.

*Kent Golding Hop Seeds:  Heirloom seeds, used for traditional ales and lagers, delicate aroma. Alpha 4.5-6.5%

*Mt. Hood Hop Seeds: Hallertauer hybrid, from OSU Hop research station. German type lagers. Alpha 3.5-5%

*Nugget Hop Seeds: Grown for ales and stouts, grows tight 1.5" cones. Alpha 12%.

* Magnum Hop Seeds: German, large cones, disease resistant. Alpha 14%

* Sunbeam Golden Hop Seeds: Saaz hybrid, used in Northern European pilsners.

* Willamette: English ales, all purpose hop, alpha 3.5-4.5%.
